Following are some observations on the way the Ratnagiri and Devgad Alphonso mangoes ripen:

The Devgad Alphonso is bigger in size (on average) than the Ratnagiri Alphonso.

Bigger fruit generally is known to have more chances of sponginess. If sponginess is near the seed, it just makes the fruit feel softer (gives the impression that the fruit is ripe because it gets pressed a little easily). However, this should not interfere with the taste of the fruit.

The Devgad Alphonso is sour when unripe (more Sour than the Ratnagiri Alphonso). It becomes extremely sweet when ripe (sourness is gone). The Devgad Alphonso needs to change color completely to yellow when ripe (any hint of Green is a good indication that the inside will be sour). The Ratnagiri Alphonso is more forgiving and is sweeter even when changing color.

The Devgad Alphonso ripens from the outside-in. That is the outside will become sweeter first and the seed will become sweeter at the end. So patience will help.

The Devgad Alphonso is less wrinkly when ripe.
