Ingredients:
- 5-7 Raw Mangoes- These mangoes would be green in color and sour in taste. We have tried this with Indian Mango, you could also do this with any raw mango variety which is sour in taste.
- Water
- 1 tsp Ground Cumin Seeds (Jeera)- You can either get dry roasted Jeera Powder (Cumin Seeds powder) from the market. You can also make it from cumin seeds- roast the cumin seeds, then either use a stone to grind them or grind them in a coffee grinder to make a powder.
- 1/2 tsp red chilli powder (if you want a taste of chili). You can also use black pepper for a variation of the flavor (whatever you prefer)
- 1 tsp salt- black salt is best. Some people use regular salt, but add black salt for flavor.
- 2-3 tbsp sugar. Some people add jaggery for the raw flavor.
- 3-4 tbsp chopped mint leaves- fresh is better, but you can also use dry mint leaves if they are the only ones available. Some people also add Cilantro and fresh green chili for added flavors.
Directions:
- Wash and Boil the raw mangoes with water either in a saucepan or a pressure cooker. In a pan they need about 10 minutes. In the pressure cooker they need a few whistles. You don't need to be precise because all you are trying to do is soften the raw mango so that the pulp and juice can be squeezed out of the mango.
- Take the softened mango and squeeze the pulp out of the mango and remove all pulp sticking to the seed. Now we blend the mixture. Some people strain the mixture and add water to it depending on the consistency you are comfortable with. Whatever we do, we want the sour mango, but we don't want the fiber to come in our mouth.
- Add sugar, salt, chilli powder and cumin and mix it thoroughly. Blending in a blender will be ideal. At this point there are endless possibilities and you can experiement with them by adding a little bit of chat masala or other masala mixes.
- Add mint and mix it into the drink. The mint needs to be made into a coarse paste. If you want the coriander flavor, you can add the coriander to the mint while making the paste. If the mint is dry, you can just crush it and that will be sufficient. Mint taste in the Panna is what makes it work.
- Chill the drink and serve. The drink can be chilled by adding ice-cubes and stirring the mixture.
Mango Panna is a very soothing drink in the hot summers. It will be sour and sweetish in taste.
